Chef Todd's Peach Cobbler

Ingredients
- Peach Filling
- 1/2 c. Brown Sugar
- 1/4 c. butter
- 1/8 tsp. cinnamon
- 2 c. water
- 2 3/4 c. THRIVE Peach Slices - Freeze Dried
- Cake
- 1 c. White Flour (All Purpose Unbleached Flour)
- 1/3 c. Cane Sugar
- 3/4 tsp. Baking Powder
- 1/4 tsp. Iodized Salt
- 1 tbsp. THRIVE Instant Milk + 1/3 cup water
- 1 tbsp. vegetable oil
- 2 tbsp. butter, room temperature
- 1 tbsp. vanilla extract
- 1 1/2 tbsp. Whole Egg Powder + 3 tbsp. water
- Streusel
- 1/4 c. Brown Sugar
- 1/4 c. Quick Oats
- 1/4 c. White Flour (All Purpose Unbleached Flour)
- 1/4 c. butter
- 1/4 tsp. cinnamon
Directions
- Combine all filling ingredients in a saucepan and bring to a simmer. Let simmer for 5 minutes, then pour into an 8x8 baking dish.
- Combine all cake ingredients in a bowl and whisk until smooth. Spoon batter evenly over peach filling.
- Combine all streusel ingredients in a bowl and cut butter into flour until crumbly and cornmeal-like. Sprinkle over cake batter.
- Bake for 30 minutes at 400⁰F or until bubbly and golden brown.
