Cherry Berry Bruschetta

A fruit filled bruschetta that will surprise everyone

Ingredients
- 1 C THRIVE Sweet Cherries
- 3 C THRIVE Strawberry Slices
- 1/4 C Basil
- 1/4 C Fresh Mint Leaves
- 3 Tbsp THRIVE Chopped Onions
- 4 Tbsp Balsamic Vinegar
- 1 Fresh Bagette Sliced on an angle in 1
- 2 Tbsp Olive Oil
- 1/2 C Balsamic Reduction
Directions
- 1. Preheat oven to 450 Degrees
- 2. Combine cherries, strawberries, onion and basil in a medium bowl. Add 3/4 cup water and let sit 5 minutes to hydrate. Add 4 tsp Balsamic Vinegar, cover and refrigerate 15 minutes so that the flavors develop.
- 3. Slice Baguette into 24 even slices about 1 inch thick. Brush one side with olive oil and place them oil side down on a large cookie sheet. Bake 5-7 minutes, watching closely, until golden brown.Allow to cool to room temperature.
- 4. Top each piece with Bruschetta mixture, then drizzle with Balsamic Reduction, serve immediately.
