Ingredients

  • 1 C THRIVE Sweet Cherries
  • 3 C THRIVE Strawberry Slices
  • 1/4 C Basil
  • 1/4 C Fresh Mint Leaves
  • 3 Tbsp THRIVE Chopped Onions
  • 4 Tbsp Balsamic Vinegar
  • 1 Fresh Bagette Sliced on an angle in 1
  • 2 Tbsp Olive Oil
  • 1/2 C Balsamic Reduction

Directions

  1. 1. Preheat oven to 450 Degrees
  2. 2. Combine cherries, strawberries, onion and basil in a medium bowl. Add 3/4 cup water and let sit 5 minutes to hydrate. Add 4 tsp Balsamic Vinegar, cover and refrigerate 15 minutes so that the flavors develop.
  3. 3. Slice Baguette into 24 even slices about 1 inch thick. Brush one side with olive oil and place them oil side down on a large cookie sheet. Bake 5-7 minutes, watching closely, until golden brown.Allow to cool to room temperature.
  4. 4. Top each piece with Bruschetta mixture, then drizzle with Balsamic Reduction, serve immediately.
