Chicken Fried Rice

Ingredients
- 3 C THRIVE Instant White Rice
- 3 Tbsp Olive Oil
- 1/2 C THRIVE Carrot Dices
- 2 Tbsp THRIVE Chopped Onions
- 1/2 C THRIVE Green Peas
- 1/2 C THRIVE Chopped Chicken (THRIVE Chicken Dices)
- 1/2 C THRIVE Celery
- 1/2 C THRIVE Red Bell Peppers
- 3 C Water
- 4 Tbsp THRIVE Scrambled Egg Mix plus 6 Tbsp water
- 1 Tbsp Olive Oil
- 1 tsp Peppercorn
- 1 tsp Iodized Salt
- 2 clv Garlic, Raw
Directions
- Precook rice according to directions
- Put all ingredients except rice, scrambled eggs, pepper, salt, and garlic in the 3 cups water and let soak.
- Mix scrambled egg mix with 6 Tb. of water.
- While ingredients are soaking, heat olive oil and saute garlic.
- Add precooked rice to heated oil and cook until golden brown.
- When rice is done, make a well in center add another Tb of Olive oil pour in scrambled egg mix and cook thoroughly, chopping into small pieces.
- Mix egg and rice.
- Drain any excess water from the soaking mixture
- Add chicken and veggies to pan and heat thoroughly
- Salt and pepper to taste
