Creamy Asparagus Soup

Ingredients
- 1 1/2 Tbsp Garlic, minced
- 1 Tbsp Olive Oil
- 4 C THRIVE Asparagus
- 3/4 C THRIVE Chopped Onions
- 1 C THRIVE Celery
- 5 C Water
- 1 Tbsp THRIVE Chicken Bouillon
- 1 Tbsp THRIVE Italian Seasoning Blend
- 1 tsp Iodized Salt
- 1/4 tsp Peppercorn
- 1 tsp THRIVE Chefs Choice
- 2 C Heavy Cream
- 1/4 tsp Rice Vinegar
Directions
- In a 3 quart sauce pan, sweat the garlic and olive oil together.
- Add the vegetables to the pot and stir together.
- Add the water and the bouillon and stir well.
- Add all the seasonings and cover with a lid and simmer for about 10 minutes.
- Place the soup in a blender and blend smooth.
- Place back into the pot and add the cream and vinegar and bring to a simmer for an additional 5 minutes.
- Taste and adjust as needed.
- Yield: 7 cups
