Crustless Coconut Pie Thrivelized

This amazing custard pie with coconut has been adapted from a Taste of Home recipe [https://www.tasteofhome.com/recipes/easy-coconut-pie]. I 'Thrivelized'. It's simply amazing! Make it ahead in a jar & bake anytime!

Ingredients
- 6 Tablespoons Thrive Life Instant Milk
- 1 Cup Sugar
- 1/2 Cup Thrive Life Scrambled Egg Mi
- 1/2 Cup Thrive Life Gluten Free Flour
- 6 Tablespoons Thrive Life Butter Powder
- 1 teaspoon Vanilla or Vanilla Powder
- 1/2 teaspoon Salt
- 1 Cup Shredded Coconut
- 3 Cups less 1 Tablespoon Water
Directions
- Preheat Oven to 350º
- Grease 10" Pie Plate
- Pour 1st 7 [dry] ingredients into a blender.
- Add water.
- Cover and process for 10 seconds; Scrape the sides.
- Add the coconut.
- Cover and process for additional 12 Seconds.
- Pour into the greased pie plate. (I take blender jar to pie plate in the oven.)
- Bake until a knife inserted in the center comes clean, about 50-55 minutes.
- For MIAJ: Layer the 7 dry ingredients in order listed; put coconut in a small zip lock bag on the top. Add an oxygen absorber if storing for an extended time.
