A burrito bowl is basically a burrito without a tortilla. You can serve it over rice, over quinoa, over a lettuce salad, .... or alone. It's versatile and eager to make you happy. In this image I used ground beef and served it over brown rice. By Cindy Suelzle

Ingredients

  • 1 cup Instant Black Beans. If you use hot water you can expect them to refresh in about 20 minutes. If you use cold water it will take about 30+ minutes.
  • 1 cup Thrive Chicken Dices OR Thrive Ground Beef
  • 1/2 cup Thrive Green Peppers
  • 1/2 cup Thrive Red Peppers
  • 1/3 cup Thrive Chili Peppers
  • 1/3 cup Thrive Onion Slices
  • 1 cup Thrive Tomato Dices OR 2 T Tomato Powder
  • 1 cup+ (or more) Thrive Sweet Corn (we really like corn, so I'll often double the amount)
  • 1 cup Thrive Shredded Cheddar OR Pepper Jack Cheese (don't be afraid to add more cheese if you love cheese) You be YOU!
  • 1 heaping Tablespoon Taco Seasoning (your favourite blend)
  • 2+ cups (or more) HOT water

Directions

  1. Refresh Instant Beans ahead of time (at least 1/2 hour). Set aside.
  2. Refresh Shredded Cheese ahead of time (at least 20 minutes). Set aside.
  3. Refresh meat ahead of time (at least 15-20 minutes). Set aside.
  4. Put all ingredients except for cheese, tomato powder, Taco seasoning and water, into a bowl. Mix to combine thoroughly.
  5. Mix tomato powder and Taco Seasoning and dissolve in 2 cups HOT water, being sure to get rid of any lumps..
  6. Pour seasoned water over top the mixed ingredients and stir to ensure everything gets moistened. If it absorbs the water too quickly, add another cup water.
  7. Taste test and adjust seasoning as desired. I often add Red Pepper flakes for a little spice. Decide now if you want some salt and pepper (more than what's in the Taco seasoning)
  8. As a last step, add the refreshed shredded cheese and toss to combine thoroughly.
  9. Serve over top rice.

  11. Serve with Salsa and Sour cream on top.
  12. Serve with "Avocado Lime Dressing" (also on this recipe site)
  13. Serve with 'Taco Salad Dressing' OR 'Cilantro Lime Dressing' in my blog site "BackyardCityHomestead.com". Just search the name of the dressing.
  14. Serve with a handful chopped Cilantro on top.

  16. Using freeze dried ingredients makes everything quick, but don't hesitate to substitute any ingredient with a 'fresh' alternative. Simply factor in a few more minutes and plan to saute the peppers or onion a little to soften at the beginning.
