German Potato Salad

Ingredients
- 4 c. THRIVE Potato Dices
- 2 c. Water
- 3/4 c. Bacon, diced
- 2 tbsp. THRIVE Chopped Onions
- 1/2 c. Red Wine Vinegar
- 1/2 tbsp. Mustard Seeds
- 2 tbsp. Oil
- 1/2 tsp. THRIVE Chefs Choice
- 1/2 tsp. Parsley
- 1/2 tsp. Chives
- 1/4 tsp. Basil
- 1/4 c. THRIVE Green Onions
- 1/2 c. Mayonnaise
Directions
- Mix potato dices with water and let sit.
- Meanwhile, sauté bacon until crispy. Remove bacon from pan with slotted spoon, leaving grease in pan.
- Sauté onions in the grease for about 1 minute.
- Carefully add vinegar and mustard seeds and let simmer for 2 more minutes.
- Whisk in oil and seasoning blend.
- Pour warm dressing over reconstituted potatoes and mix together.
- Fold in bacon, herbs, green onions, and mayonnaise.
