Ingredients

  • 4 c. THRIVE Potato Dices
  • 2 c. Water
  • 3/4 c. Bacon, diced
  • 2 tbsp. THRIVE Chopped Onions
  • 1/2 c. Red Wine Vinegar
  • 1/2 tbsp. Mustard Seeds
  • 2 tbsp. Oil
  • 1/2 tsp. THRIVE Chefs Choice
  • 1/2 tsp. Parsley
  • 1/2 tsp. Chives
  • 1/4 tsp. Basil
  • 1/4 c. THRIVE Green Onions
  • 1/2 c. Mayonnaise

Directions

  1. Mix potato dices with water and let sit.
  2. Meanwhile, sauté bacon until crispy. Remove bacon from pan with slotted spoon, leaving grease in pan.
  3. Sauté onions in the grease for about 1 minute.
  4. Carefully add vinegar and mustard seeds and let simmer for 2 more minutes.
  5. Whisk in oil and seasoning blend.
  6. Pour warm dressing over reconstituted potatoes and mix together.
  7. Fold in bacon, herbs, green onions, and mayonnaise.
