"Gimme Thrive" Cranberry Salad

A tasty twist on the traditional holiday cranberry sauce. Don't let the prep time fool you....most of that time is waiting for the gelatin to thicken!

Ingredients
- 2 c. boiling water
- 2 pkg. cherry gelatin (3 oz. size)
- 1 c. sugar
- 3/4 c. pineapple juice (6 ounces)
- Fruit & Nut Mixture
- 2 c. Sweetened Cranberries - Freeze Dried
- 1 1/3 c THRIVE Pineapple - Freeze Dried
- 1 c. THRIVE Fuji Apple Slices - Freeze Dried
- 2 oranges
- 1 c pecans, chopped
- 3/4 c pineapple juice (6 ounces)
- 1 1/4 c water
Directions
- Pour the boiling water into a medium mixing bowl with the cherry gelatin, sugar, and pineapple juice. Stir to dissolve and chill in refrigerator until thickened but not set (about 1 to 1.5 hours).
- While the gelatin is thickening, break up the freeze dried fruits into smaller pieces. The apples are easy to break apart by hand. Put the cranberries or the pineapple in a zip top bag, seal, and break up the pieces using a rolling pin. Place the fruit into a medium mixing bowl.
- Zest one of the oranges into the fruit bowl. Then segment the oranges (if you don't know how to do this, it's easy...just check out a video on YouTube to find out how...you're just extracting the orange flesh without the membrane or rind...TIP: when you have extracted all the flesh, squeeze the juice from the membranes into the fruit bowl for extra flavor). Chop the segments into smaller pieces and add to the fruit bowl.
- Add the nuts, pineapple juice, and water to the fruit and stir well. Set aside to refresh fully while the gelatin is thickening.
- Once the gelatin is thick but not set, pour the fruit and nut mixture into the gelatin and stir well to combine. Chill till ready to serve.
