"Gimme Thrive" Frittata

A breakfast or brunch that you can customize to fit your tastes. I have measurements here for my family's favorites, but you really only have to measure the egg; everything else is just throw and go. The possibilities are endless!

Ingredients
- 1 Tbsp Bacon Grease or Cooking Oil
- 1 C THRIVE Sausage Crumbles
- 1 C Water
- 1/4 C THRIVE Green Onions
- 1/4 C Mixed Bell Peppers
- 1/2 C THRIVE Zucchini
- 1 1/4 C THRIVE Scrambled Egg Mix Egg Mix
- 30 Tbsp (1 3/4 C + 2 Tbsp) Water
- 1/4 C THRIVE Shredded Cheddar Cheese
Directions
- Preheat oven to 350 degrees.
- In an oven-proof skillet, heat bacon grease or oil on medium-high heat. Add Sausage Crumbles and stir for about 30 seconds. Pour in the 1 cup of water.
- Add veggies in. Stir and simmer until veggies are well-hydrated, adding more water in small amounts if necessary. If there is too much water, simply simmer it off.
- Whisk Scrambled Egg Mix and 30 Tablespoons of water together. (It's 2 cups of water minus 2 Tbsp, if that's easier!) Stir in the Cheddar.
- When the sausage/veggie mixture is all hydrated with no extra water, turn off the burner. Make sure the sausage and veggies and in an even layer in the skillet. Slowly and carefully pour the egg mixture over the sausage and veggies. Place in the oven.
- Bake for 12-15 minutes. Insert a knife in the center just to make sure the frittata is set. Let it cool for a few minutes, slice, and serve.

Excellent FrittataThis recipe makes the best Frittata. I didn't have the Zucchini so I used the Thrive Life Spinach instead. This is so delicious and easy. I will probably make this recipe "mine" by adding some garlic and parsley.
