"Gimme Thrive" Low Carb Taco Casserole

This goes together so fast and you don't have to worry about thawing meat or chopping veggies. While it's in the oven you can prepare a salad or other side to serve with it.

Ingredients
- 2 c. THRIVE Ground Beef
- 1/4 c. THRIVE Chopped Onions
- 2 tbsp. THRIVE Green Chili Peppers
- 1/2 c. THRIVE Tomato Dices
- 2 tbsp. THRIVE Green Bell Peppers
- 2 tbsp. THRIVE Red Bell Peppers
- 2 1/2 c. Water
- 1 pkg. Taco seasoning mix (or homemade equivalent)
- 2 tbsp. THRIVE Tomato Powder
- 2 oz. Cream Cheese
- 4 Eggs
- 1 tbsp Hot sauce (such as Cholula)
- 1/4 c. Heavy Whipping Cream
- 1 c. THRIVE cheese (cheddar, Pepper Jack, Mexi-blend, etc)(rehydrated)
Directions
- Preheat oven to 350 degrees.
- If using an oven-proof skillet, you can prep and bake the ingredients in the skillet. If not using an oven-proof skillet, spray an 8x8-inch pan with cooking spray for baking.
- Place a medium skillet over medium-high heat. Add the meat and veggies and stir for 30 seconds or so to heat them dry. Then add the water and allow to simmer for a few minutes.
- Add in the taco seasoning and the tomato powder and stir well to combine. Continue to simmer for a few minutes until all the ingredients are refreshed.
- Turn off heat, add in the cream cheese, and allow it to melt as you carefully stir it in. If you are baking in the skillet, level the ground beef with the back of a spoon. If you're using a baking pan, pour and level the ground mixture into the pan.
- Whisk the eggs in a medium bowl, then add in the hot sauce, heavy cream, and cheese, stirring to combine.
- Slowly pour the egg mixture over top of the ground beef mixture and spread it to the edges.
- Bake for 30 minutes. Serve with sour cream, salsa, and hot sauce.
