"Gimme Thrive" Summer Salad

Ingredients

  • 2 c. THRIVE Cauliflower- Freeze Dried
  • 2 c. THRIVE Sweet Corn - Freeze Dried
  • 1 c. THRIVE Red Bell Peppers - Freeze Dried
  • 1/2 c. THRIVE Green Onions - Freeze Dried
  • 2 c. diced hothouse cucumber or THIRVE cucumber
  • 2 tsp. Iodized Salt
  • 1/2 tsp. Peppercorn
  • 1/2 c. Mayonnaise

Directions

  1. In a large bowl, combine the cauliflower, corn, red peppers, and green onions. Add 6 cups hot water and let sit for 10 minutes.
  2. Drain the veggie mix in a sieve or small-holed colander (so the little pieces don't sneak out!).
  3. Pour veggies back into the large bowl.
  4. Add cucumber, salt, and peppercorn to the veggie mix and mix well.
  5. Add in the mayonnaise and stir to combine. Refrigerate until ready to serve.
