"Gimme Thrive" Summer Salad

This refreshing salad is the perfect dish for your summer picnic or potluck. Want a little extra flavor? Try adding Cholula sauce (to taste) at the end to give it a little kick!

Ingredients
- 2 c. THRIVE Cauliflower- Freeze Dried
- 2 c. THRIVE Sweet Corn - Freeze Dried
- 1 c. THRIVE Red Bell Peppers - Freeze Dried
- 1/2 c. THRIVE Green Onions - Freeze Dried
- 2 c. diced hothouse cucumber or THIRVE cucumber
- 2 tsp. Iodized Salt
- 1/2 tsp. Peppercorn
- 1/2 c. Mayonnaise
Directions
- In a large bowl, combine the cauliflower, corn, red peppers, and green onions. Add 6 cups hot water and let sit for 10 minutes.
- Drain the veggie mix in a sieve or small-holed colander (so the little pieces don't sneak out!).
- Pour veggies back into the large bowl.
- Add cucumber, salt, and peppercorn to the veggie mix and mix well.
- Add in the mayonnaise and stir to combine. Refrigerate until ready to serve.
