Gluten Free Buttermilk Pancakes

Ingredients
- 2 c. Buttermilk
- 1 c. Water
- 1/4 c. THRIVE Scrambled Egg Mix
- 1/4 tsp. Iodized Salt
- 1 tsp. Baking Soda Baking Soda
- 1 tsp. Baking Powder Baking Powder
- 2 c. THRIVE Gluten Free Flour
- 2 tbsp. Cane Sugar
- 1 1/2 tbsp. Bacon grease, hot
Directions
- Add buttermilk and water to a large bowl and mix together.
- Combine all dry ingredients and sift in to the buttermilk and water mixture. Lightly mix a few times with a spoon.
- Add hot bacon grease and mix until just combined. Do not over mix. Batter will seem slightly thick.
- Pour 2-3 inch pancakes onto a hot 350F degree griddle and cook until golden brown and cake like in the middle.
- Top with your favorite Toppings.
- Yield: 12 2-3 inch pancakes
