Gluten Free Peach Cobbler

This is a blend of Chef Todd's peach cobbler and a family recipe. Thrive Gluten Free Flour was subbed easily for the all-purpose flour.

Ingredients
- 1/4 c. Butter or THRIVE Butter
- Peach Filling
- 2 3/4 c. THRIVE Peach Slices FD
- 1 c. Brown Sugar
- 1/4 c. Butter
- 1/8 tsp. Ground Cinnamon
- 2 c. Water
- Cake
- 1 c. THRIVE Gluten Free Flour
- 1 c. Cane Sugar
- 2 tbsp. THRIVE Instant Milk
- 2/3 c. Water
Directions
- Preheat oven to 350 degrees. Place the 1/4 cup butter in a 2 qt dish to melt in the oven as it heats.
- Combine all filling ingredients in a saucepan and bring to a simmer. Let simmer for 5- 10 minutes.
- Once the peach filling has simmered and the butter is melted, it's time to make the cake.
- In a bowl (or the empty jar), add the cake mix and water.
- Mix well. You may like to add a splash of vanilla to the cake for some extra flavor.
- Pour the cake batter over the melted butter.
- Pour peach filling over the cake batter. (It should sink.)
- Bake for 45 min or until the cake is done (toothpick come out clean).
