Gluten-Free Vanilla Cake

Ingredients
- 2 Tbsp Vanilla Extract
- 1/2 tsp Lemon Juice
- 2 C THRIVE Instant Brown Rice (ground into flour)
- 2 C Tapioca Starch
- 2 C Cane Sugar
- 1 tsp Iodized Salt
- 3 tsp Baking Powder
- 1 tsp Xanthum Gum
- 6 Tbsp THRIVE Instant Milk
- 2 C Water
- 1/4 C THRIVE Scrambled Egg Mix
- 1/2 C Water
- 8 Tbsp Butter, melted
Directions
- Preheat oven to 350F.
- Spray a 9x13 cake pan and set aside.
- In a medium-size mixing bowl, mix together the dry ingredients.
- Once mixed, pour in the wet ingredients and beat with a mixer until smooth, being careful not to over mix.
- Pour into prepared cake pan and smooth out with wet fingers.
- Bake in preheated oven until firm (about 15–20 minutes).
