Green Curry in a Hurry (Jar Meal)

Have you ever made a meal that by the time you prepared it and cleaned up you were too exhausted to even enjoy it? Well never again my friend. You are going to love this quick and delicious meal-and clean up is a snap! (NOTE: This meal does not have to be pre-assembled as a jar meal. But I love having several different meals on hand ready to go in jars in my cupboard)

Ingredients
- 1 C THRIVE Seasoned Chicken Slices
- 1 C THRIVE Zucchini
- 1/2 C THRIVE Red Bell Peppers
- 1/2 C THRIVE Carrot Dices
- 1/4 C THRIVE Chopped Onions
- 2 tsp Garlic, Raw
- 1/2 tsp Steveia Leaf Sweetener (or 1 Tbl THRIVE Brown Sugar)
- 1 Tbsp Coconut Oil (optional)
- 1/2 tsp Sea Salt
- 3 Tbsp Green Curry Paste
- 1 can Unsweetened Coconut Milk
- 1 C Organic Quinoa
- 1 1/2 tsp THRIVE Chicken Bouillon
Directions
- Assemble Your Jar Meal
- 1. Add first 5 ingredients to a dry sterilized, wide mouth quart jar. Use within 3 months. To lengthen shelf life add an oxygen absorber or use a Food Saver jar lid attachment to seal.
- Prepare a Meal
- Add 1 1/2 tsp of Thrive Chicken Bouillon to 1 1/2 cups of water and bring to a boil. Add 1 cup of Thrive Organic Quinoa. Simmer for 12-15 minutes or until water is absorbed. Fluff with a fork.
- Pour jar ingredients in a large skillet with 2 1/4 cups of hot water.
- Bring to a gentle boil. Stir gently to combine and let simmer 5 minutes.
- Stir in curry paste and coconut oil.
- Add coconut milk and simmer for 5-10 minutes, stirring occasionally. When chicken is soft and carrots are tender it is done.
