Healthy Chicken Quinoa Soup

Ingredients
- 1 tbsp. Olive oil
- 1 tbsp. Garlic, minced
- 1/4 c. THRIVE Chopped Onions
- 1 c. THRIVE Seasoned Chicken Slices
- 1/4 c. THRIVE Celery
- 2 tbsp. THRIVE Carrot Dices
- 3/4 c. Kale, chopped or THRIVE Kale
- 1/2 c. Organic Quinoa (rinsed)
- 9 c. Water
- 1/2 c. THRIVE Tomato Dices
- 1/4 c. THRIVE Broccoli
- 1/4 c. THRIVE Cauliflower
- 1/2 c. THRIVE Butternut Squash
- 1/2 c. THRIVE Asparagus
- 2 tbsp. THRIVE Chicken Bouillon
- 1 tbsp. Basil
- 1 tbsp. Lemon juice
- 1 tsp. Worcestershire sauce
- 1 tsp. Cholula hot sauce
- 1/2 tsp. THRIVE Chefs Choice
- 1 tsp. soy sauce
Directions
- Add olive oil and garlic to pan and sweat. Add onions, chicken, celery, carrots, kale, and quinoa. Stir, then add water. Simmer for 8 minutes.
- Add in all remaining ingredients. Simmer for an additional 6 minutes.
- Allow to rest for 3–4 minutes before serving.
- Yield: 8 1/2 cups
