Healthy Smashed Potatoes

My kids do not like butternut squash...but I like that it is a rich source of nutrients for the body, so I sneak it in whenever I can.
Tonight I made Smashed Potatoes, but barely used any potatoes, and gave my family a few extra helping of healthy non GMO vegetables :)

Ingredients
- 2 C THRIVE Butternut Squash
- 1 C THRIVE Cauliflower
- 1/4 C THRIVE Chopped Onions
- 1/2 C THRIVE Potato Dices
- 0 pn 2% Milk
- 0 dash Sea Sal
- 1 Tbsp Butter, salted
- 1 dash Chives
Directions
- I ground up all FD ingredients in a coffee grinder until they were a fine powder, then rehydrated it all with boiling water (keep stirring as you add the water...you'll be able to tell when you've added enough).
- Add a splash of milk (if desired) and butter, and serve while warm.
- Absolutely delicious, and ready in minutes without any mess. Enjoy!
