Hearty Vegetable Spelt Soup

Ingredients
- 2 tbsp. Butter
- 1 tbsp. Garlic, minced
- 1 c. Organic Spelt (uncooked)
- 1/2 c. White Wine (optional)
- 2 tbsp. THRIVE Chicken Bouillon
- 7 c. Water
- 1/2 c. THRIVE Chopped Onions FD
- 1/4 c. THRIVE Sausage Crumbles FD
- 1/2 c. THRIVE Sweet Corn FD
- 2 tbsp. THRIVE Tomato Powder
- 1 c. THRIVE Mushroom Pieces FD
- 1/4 c THRIVE Green Chili Peppers FD
- 1/2 c. THRIVE Celery FD
- 2 bay leaves
- 2 tsp. paprika
- 1 tsp. cumin
- 1 tsp. THRIVE Chefs Choice
- 1/2 c. THRIVE Tomato Dices - Freeze Dried
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Cholula hot sauce
- 1 lemon, juiced
- 1 tsp. Iodized Salt
- 1/4 tsp. Peppercorn
- 1/2 c. THRIVE Chopped Spinach - Freeze Dried
- 1 1/2 tbsp Basil
- 1 1/2 tbsp Parsley
Directions
- Sauté butter and garlic until caramelized. Add spelt and toast.
- Deglaze with white wine until mixture is reduced by half.
- Add all remaining ingredients except spinach, basil, and parsley.
- Cook covered for 45 minutes on medium simmer.
- Add spinach and herbs and simmer for 2 more minutes.
- Remove from heat and serve.
