Honey Oat Banana Muffins

A great way to use THRIVE Honey Crystals!

Ingredients
- 1 1/2 c. White Flour (All Purpose Unbleached Flour)
- 1 c. Quick Oats
- 3/4 c. THRIVE Honey Crystals
- 2 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1/2 tsp. Iodized Salt
- 2 tbsp. Whole Egg Powder + 1/4 cup water
- 2 tbsp. THRIVE Instant Milk + 3/4 cup water
- 1/4 c. butter, melted
- 1 tsp. vanilla extract
- 2 c. THRIVE Banana Slices - Freeze Dried (reconstituted and pureed)
- 3 tbsp. Streusel - Quick Oats
- 1/4 c. Streusel - THRIVE Honey Crystals
- 1/4 c. Streusel - White Flour (All Purpose Unbleached Flour)
- 1/4 c. Streusel - butter, diced cold
- 2 tbsp. Streusel - Brown Sugar
- 1/2 tsp. Streusel - cinnamon
Directions
- Combine all dry ingredients in a bowl and stir to combine. (not including streusel ingredients)
- Add wet ingredients and blend together until just incorporated.
- Scoop into 12 paper lined muffin tins.
- Mix all streusel ingredients together and cut with dough cutter. Sprinkle even portions on top of the muffins.
- Bake in oven at 400F for 30–35 minutes.
