Mock Borscht Soup

Simple yet delicious Borscht soup without beets

Ingredients
- 1/2 C THRIVE Potato Chunks
- 1 C THRIVE Carrot Dices
- 1/2 C THRIVE Chopped Onions
- 2 C Cabbage
- 1 Tbsp Fat Free Sour Cream
- 2 Tbsp Fresh Dill
- 3 clv Garlic, Raw
- 1 lb Ground Pork (Optional)
Directions
- Add garlic to ground pork and mix together. Form into small balls and set aside for later
- Add all Thrive vegetables together in a pot of water that covers them to make a loose soup mix. Bring to a boil.
- Add cabbage and dill and let boil til cabbage softened. If using pork meatballs add them also and boil til cooked.
- Remove soup from stove, serve in bowls and add a dollop of sour cream to each bowl, garnish with more fresh dill and serve with Chef Todd's Easy Cheesy Breadsticks!
