Northern Style Cornbread

This sweet cornbread has a fluffy, cake-like texture. It is terrific with chili or bean soup, but a dollop of cinnamon honey butter will convince you it is dessert!

Ingredients
- 1/2 C Butter, unsalted (melted)
- 2/3 C Cane Sugar
- 1 C Whole Buttermilk
- 1/4 C Water
- 1 C Cornmeal
- 1 C White Flour (All Purpose Unbleached Flour)
- 2 Tbsp Whole Egg Powder dry
- 1/2 tsp Baking Soda
- 1/2 tsp Iodized Salt
Directions
- Preheat oven to 375 degrees F. Grease an 8x8 square baking pan.
- Combine melted butter, sugar, buttermilk, and water in large mixing bowl. Stir to dissolve sugar.
- Add all remaining ingredients and mix well. Pour into greased pan.
- Bake in preheated oven for 25-35 minutes, or until top begins to turn golden brown and toothpick inserted into center comes out clean.
