Oatmeal Breakfast Bake

Oatmeal, fruit, Nuts. Lots of THRIVE, lots of fiber, lots of yum!

Ingredients
- 2 C Quick Oats
- 1/3 C Brown Sugar
- 1 1/4 tsp Baking Powder
- 1/2 tsp Sea Salt
- 1 tsp Ground Cinnamon
- 2 Eggs
- 1 3/4 C Plain or Non Dairy Milk
- 2 tsp Vanilla Extract
- 1/2 C THRIVE Peach Slices
- 1/2 C THRIVE Banana Slices
- 1/2 C THRIVE Fuji Apple Slices
- 3/4 C THRIVE Whole Strawberries or THRIVE berry of your choice
- 1/3 C Chopped Toasted Nuts &/or Seeds
Directions
- Rehydrate fruits. Rehydrate berries separately
- Combine dry ingredients in large bowl (oats, sugar, salt, cinnamon, baking powder)
- In a small bowl, whisk together eggs, milk & vanilla
- Pour egg mixture into the dry ingredients and stir until combined
- Stir in bananas, peaches and apples
- Pour into prepared baked dish, spread evenly
- Top with berries & nuts/seeds
- Bake in 375 degree over for 35-45 or until set
- Let cool on a wire rack for 20 minutes. cut into servings & serve warm
