One Pot Taco Rice Skillet

by Rachel Hanchett This one pot wonder is delicious on its own but is great in tacos, salads, burritos, and stuffed peppers! There are not beans in this recipe, but you can easily add a cup of the instant pinto or instant black beans when you add the rice.

Ingredients

  • 1 c. THRIVE Ground Beef
  • 1/2 c. THRIVE Chopped Onions
  • 1 c. THRIVE Red Bell Peppers
  • 1 c. THRIVE Green Bell Peppers
  • 1 c. THRIVE Tomato Dices
  • 1/2 c. THRIVE Green Chili Peppers
  • 1 c. THRIVE Instant White Rice
  • 4 tsp. THRIVE Beef Bouillon
  • 2 tsp. Cumin Powder
  • 1 tsp. Chili Powder
  • 1 tsp. Garlic Powder
  • 1/2 tsp. cayenne pepper ( optional )
  • 4 c. water
  • 1 tbsp. THRIVE Green Onions
  • 1 c. THRIVE Shredded Monterey Jack Cheese (rehydrated)

Directions

  1. In a large pan add all ingredients except the cheese and green onion
  2. Stir well to combine.
  3. Bring to a boil, reduce heat, cover and let simmer on low until rice is soft and liquid has cooked off.
  4. Top with green onion and cheese, stir in until it melts.
  5. Serve with your favorite taco fixings, lettuce, tomato, salsa, sour cream, tortillas, chips etc
  6. Enjoy!
