Parmesan Herb Chicken

Ingredients
- Marinade for Chicken
- 5 chicken breasts
- 2 c. buttermilk
- 1/2 tsp. THRIVE Italian Seasoning Blend
- 1/4 tsp. THRIVE Chefs Choice
- 1 tbsp. garlic, minced
- Breading
- 2 c. Panko bread crumbs
- 1/4 c. Basil
- 1/2 c. THRIVE Shredded Parmesan Cheese - Freeze Dried (+2 tbsp. water)
- 1/2 c. White Flour (All Purpose Unbleached Flour)
- 1 tsp. THRIVE Chefs Choice
- 6 tbsp. THRIVE Scrambled Egg Mix (+ 3/4 c. water)
- 4 c. vegetable oil
Directions
- Soak chicken in marinade ingredients for at least 2 hours.
- While marinating, combine bread crumbs, basil, and Parmesan cheese in a small bowl and set aside.
- Mix flour and Chef's Choice in another bowl and set aside.
- Mix scrambled eggs and buttermilk in another bowl and set aside.
- Dip each chicken breast in the flour mixture, then the egg wash, then the bread crumbs.
- Place breaded tenders on a sheet tray and refrigerate for 25-30 minutes until breading adheres to chicken.
- Heat oil to about 300F and fry chicken for 5-7 minutes, or until golden brown and cooked through.
- Place fried chicken on paper towels to absorb extra oil before serving.
