Ingredients

  • Marinade for Chicken
  • 5 chicken breasts
  • 2 c. buttermilk
  • 1/2 tsp. THRIVE Italian Seasoning Blend
  • 1/4 tsp. THRIVE Chefs Choice
  • 1 tbsp. garlic, minced
  • Breading
  • 2 c. Panko bread crumbs
  • 1/4 c. Basil
  • 1/2 c. THRIVE Shredded Parmesan Cheese - Freeze Dried (+2 tbsp. water)
  • 1/2 c. White Flour (All Purpose Unbleached Flour)
  • 1 tsp. THRIVE Chefs Choice
  • 6 tbsp. THRIVE Scrambled Egg Mix (+ 3/4 c. water)
  • 4 c. vegetable oil

Directions

  1. Soak chicken in marinade ingredients for at least 2 hours.
  2. While marinating, combine bread crumbs, basil, and Parmesan cheese in a small bowl and set aside.
  3. Mix flour and Chef's Choice in another bowl and set aside.
  4. Mix scrambled eggs and buttermilk in another bowl and set aside.
  5. Dip each chicken breast in the flour mixture, then the egg wash, then the bread crumbs.
  6. Place breaded tenders on a sheet tray and refrigerate for 25-30 minutes until breading adheres to chicken.
  7. Heat oil to about 300F and fry chicken for 5-7 minutes, or until golden brown and cooked through.
  8. Place fried chicken on paper towels to absorb extra oil before serving.
