Peach Cobbler Cakes

Enjoy the taste of peach cobbler in muffin form. These little cakes are delicious and easy to make.

Ingredients
- 2 c. White Flour (All Purpose Unbleached Flour)
- 3 tsp. Baking Powder
- 1 tsp. Iodized Salt
- 2 1/4 c. Cane Sugar divided
- 2 c. Water
- 6 tbsp. Nonfat Powdered Milk prepared
- 1 c. Butter, melted
- 1 tsp. Vanilla extract
- 2 c. THRIVE Peach Slices reconstituted in orange drink
Directions
- Preheat oven to 350 degrees. Grease muffin tin. Combine flour with baking powder, salt, and 2 c sugar, then whisk in reconstituted milk.
- Whisk in melted butter and vanilla.
- Evenly distribute peaches at the bottom of each muffin slot. Pour 1/4 c batter on top for each muffin, then sprinkle a bit of the remaining sugar on top.
- Bake at 350 degrees for 45 minutes or until golden-brown and crisp around the edges.
- Invert onto a cooling rack and serve warm with vanilla ice cream or whipped topping.
