Ingredients

  • 2 c. White Flour (All Purpose Unbleached Flour)
  • 3 tsp. Baking Powder
  • 1 tsp. Iodized Salt
  • 2 1/4 c. Cane Sugar divided
  • 2 c. Water
  • 6 tbsp. Nonfat Powdered Milk prepared
  • 1 c. Butter, melted
  • 1 tsp. Vanilla extract
  • 2 c. THRIVE Peach Slices reconstituted in orange drink

Directions

  1. Preheat oven to 350 degrees. Grease muffin tin. Combine flour with baking powder, salt, and 2 c sugar, then whisk in reconstituted milk.
  2. Whisk in melted butter and vanilla.
  3. Evenly distribute peaches at the bottom of each muffin slot. Pour 1/4 c batter on top for each muffin, then sprinkle a bit of the remaining sugar on top.
  4. Bake at 350 degrees for 45 minutes or until golden-brown and crisp around the edges.
  5. Invert onto a cooling rack and serve warm with vanilla ice cream or whipped topping.
