Peanut Butter Mummy Truffles

Ingredients
- 1 C Butter
- 2 lb Powdered Sugar
- 1 tsp Pure Vanilla Powder - Spice Can
- 1 pkg White Melting Chocolate
- 1 pkg Candy Eyes
- THRIVE Peanut Butter
- 1 C THRIVE Peanut Flour (Discontinued)
- 2 Tbsp Cane Sugar
- 1/2 tsp Iodized Salt
- 2/3 C Water
Directions
- Make THRIVE peanut flour into peanut butter according to Thrive Peanut Flour can instructions.
- Melt butter and peanut butter in a microwave safe bowl until smooth, then stir.
- Mix in powdered sugar and vanilla.
- Let mixture cool in fridge for approx. 40 minutes, or until firm.
- Remove mixture from fridge, and roll into balls. Place on a well-greased pan to sit, and refrigerate for another 40 minutes.
- Melt chocolate in microwave safe bowl until smooth, then stir.
- Remove peanut butter balls from fridge, and with a toothpick, individually dip into chocolate. After ball is well coated, place on a well-greased pan.
- Add candy eyes onto balls before chocolate cools.
- Drizzle with remaining chocolate.
