Ingredients

  • 1 c. Thrive Chopped Chicken
  • 1 c. Thrive Pineapple
  • 1 1/2 c. water
  • 1/4 c. Mayonnaise
  • 1 tsp. Summer Limeade (Seasonal) just the powder
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1 bunch large basil leaves
  • 1 pkg. whole wheat hamburger buns
  • 1 tbsp. favorite oil for toasting buns

Directions

  1. Chicken Pineapple filling
  2. In a closed container reconstitute the chicken and pineapple by adding water.
  3. Only enough to coat the mixture; about 1 to 1 ½ cups of water.
  4. Close lid, tumble in the container and place in the fridge for at least 10 min.
  5. Take container out and add the mayo, lime juice, salt and pepper to chicken & pineapple filling.
  6. Let sit in the fridge until chicken and pineapple is tender.
  7. About 30 minutes.
  8. Assembling the sandwiches
  9. Pour oil in a pan over medium high heat. place buns face down over oil until toasted.
  10. Add a spoonful of chicken pineapple filling and cover with a large basil leaf. Take a big bite!
