Pineapple, Chicken & Basil Sandwiches

This recipe can easily be a meal if placed on large hamburger buns, or an appetizer if placed on sliders or crackers. I love eating this sandwich for light Summer meals or lunches paired with sweet potato fries or watermelon.

Ingredients
- 1 c. Thrive Chopped Chicken
- 1 c. Thrive Pineapple
- 1 1/2 c. water
- 1/4 c. Mayonnaise
- 1 tsp. Summer Limeade (Seasonal) just the powder
- 1/2 tsp. Salt
- 1/4 tsp. Black Pepper
- 1 bunch large basil leaves
- 1 pkg. whole wheat hamburger buns
- 1 tbsp. favorite oil for toasting buns
Directions
- Chicken Pineapple filling
- In a closed container reconstitute the chicken and pineapple by adding water.
- Only enough to coat the mixture; about 1 to 1 ½ cups of water.
- Close lid, tumble in the container and place in the fridge for at least 10 min.
- Take container out and add the mayo, lime juice, salt and pepper to chicken & pineapple filling.
- Let sit in the fridge until chicken and pineapple is tender.
- About 30 minutes.
- Assembling the sandwiches
- Pour oil in a pan over medium high heat. place buns face down over oil until toasted.
- Add a spoonful of chicken pineapple filling and cover with a large basil leaf. Take a big bite!
