Ingredients

  • 3/8 c. THRIVE Instant Quinoa
  • 7/8 c. Butter
  • 5/8 c. THRIVE Honey Crystals
  • 1 2/3 tbsp. THRIVE Scrambled Egg Mix plus 3 tbsp water
  • 1/2 tbsp. Pure Vanilla
  • 1/4 tbsp. Baking Powder
  • 1/4 tsp. Iodized Salt
  • 1 2/3 c. White Flour (All Purpose Unbleached Flour)
  • 3/8 c. Quick Oats
  • 1 2/3 c. Butterscotch chips
  • 3/8 c. Pecans, chopped

Directions

  1. To cook quinoa bring 1 cup of water and quinoa up to a simmer in a small sauce pot. Simmer for 3-5 minutes, in a strainer rinse with cold water and drain well.
  2. Cream together butter and honey crystals until fluffy.
  3. Add in egg, vanilla, baking powder, and salt and mix together.
  4. Add in cooked quinoa, flour, quick oats, butterscotch chips and pecans.
  5. Mix until just combined.
  6. Scoop by tablespoon onto parchment lined cookie sheet.
  7. Flatten the dough before baking.
  8. Bake at 350 for 12 minutes, or until lightly browned.
