Puffed Quinoa Honey Cookies

Ingredients
- 3/8 c. THRIVE Instant Quinoa
- 7/8 c. Butter
- 5/8 c. THRIVE Honey Crystals
- 1 2/3 tbsp. THRIVE Scrambled Egg Mix plus 3 tbsp water
- 1/2 tbsp. Pure Vanilla
- 1/4 tbsp. Baking Powder
- 1/4 tsp. Iodized Salt
- 1 2/3 c. White Flour (All Purpose Unbleached Flour)
- 3/8 c. Quick Oats
- 1 2/3 c. Butterscotch chips
- 3/8 c. Pecans, chopped
Directions
- To cook quinoa bring 1 cup of water and quinoa up to a simmer in a small sauce pot. Simmer for 3-5 minutes, in a strainer rinse with cold water and drain well.
- Cream together butter and honey crystals until fluffy.
- Add in egg, vanilla, baking powder, and salt and mix together.
- Add in cooked quinoa, flour, quick oats, butterscotch chips and pecans.
- Mix until just combined.
- Scoop by tablespoon onto parchment lined cookie sheet.
- Flatten the dough before baking.
- Bake at 350 for 12 minutes, or until lightly browned.
