Ingredients

  • 1 1/2 c. THRIVE Pulled Pork - Freeze Dried
  • 1/2 c. THRIVE Onion Slices - Freeze Dried
  • 1/4 c. THRIVE Sweet Corn - Freeze Dried
  • 1/2 c. THRIVE Green Onions - Freeze Dried
  • 1/2 c. THRIVE Red Bell Peppers - Freeze Dried
  • 3/4 tsp. Chili Powder
  • 1/2 tsp. Cumin
  • 1 tsp. THRIVE Chefs Choice
  • 1 1/2 c. Water
  • 1 1/2 c. THRIVE Shredded Cheddar Cheese - Freeze Dried reconstituted
  • 3 Tortillas, 10-12 inch
  • 3 tbsp. Sweet baby Ray's BBQ sauce
  • 1 tsp. Cholula
  • 1 tbsp. Cilantro

Directions

  1. Reconstitute cheese as far in advance as you can, the day before is perfect.
  2. In a quart container with a lid, add in the pulled pork, onions, corn, peppers, chili powder, cumin and thrive seasoning with 1 1/2 cups of water. Allow to sit for 10 minutes tumbling every few minutes.
  3. Preheat a griddle.
  4. Cook the pork mixture in a skillet while reducing liquid, after liquid is mostly gone add in the BBQ sauce and cholula. Finish with the cilantro.
  5. Place 3 tortilla's on the griddle, or as many that will fit, flat, and sprinkle 1/2 cup of cheese onto each tortilla. Place 1/3 of the pork filling onto half of each tortilla. Fold over the half without the filling and press down to seal, cook on both sides until lightly brown.
  6. Place cooked quesadilla on cutting board and cut into 4 pieces. Enjoy
