Ingredients

  • For the Crust: 3 c Thrive Life white Rice prepared
  • 1/4 c THRIVE Shredded Cheddar Cheese - Freeze Dried ReFreshed
  • 1/4 c THRIVE Shredded Monterey Jack Cheese - Freeze Dried ReFreshed
  • For the Bean Layer: 1 c THRIVE Instant Refried Beans
  • 1 Tbsp Thrive Diced Onions
  • 1 1/2 c Water
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Season Salt
  • 1/4 tsp Peppercorn
  • For the Carnitas Layer 2 c THRIVE Pulled Pork
  • 1/4 c THRIVE Green Chili Peppers
  • 1/2 c THRIVE Onion Slices
  • 1/4 tsp THRIVE Chefs Choice
  • 1/4 tsp Summer Limeade
  • 1/4 tsp ground cumin
  • 1/4 tsp Chili Powder
  • 2 c Water
  • 2 tbsp Bacon Grease
  • 1 tsp minced garlic
  • Enchilada Sauce 1/3 c THRIVE Espagnole (Savory Beef Gravy)
  • 1 tsp Thrive Tomato Powder
  • 1 tbsp THRIVE Chopped Onions
  • 2 tbsp THRIVE Green Chili Peppers
  • 1/4 tsp THRIVE Chefs Choice
  • 1 tbsp Cilantro
  • 2 1/2 c Water
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp minced garlic
  • 1 1/2 tsp Lime Juice
  • 1/4 c Sour Cream
  • Toppings/ Garnishing 1/2 c THRIVE Shredded Cheddar Cheese - Freeze Dried ReFreshed
  • 1/2 c THRIVE Shredded Monterey Jack Cheese - Freeze Dried ReFreshed
  • 1/4 c THRIVE Green Onions - Freeze Dried
  • 1/4 Avocados
  • 1/2 roma tomato

Directions

  1. Preheat oven to 375 degrees F
  2. Prepare the Crust
  3. Toss together in a bowl, the cooked rice, prepared egg mix, and cheeses.
  4. Grease an 8x8 inch baking pan or 9x9 inch casserole dish
  5. Pour rice mixture into pan and press down firmly with the back of a spoon
  6. Bake crust for 15 minutes
  7. Prepare Bean Layer
  8. Place all ingredients. Refried Beans, Chopped onions, water, garlic powder, season salt, Peppercorn, in a glass bowl and microwave on high for 4 minutes. Stir and set aside
  9. Prepare Carnitas
  10. Heat bacon grease in a medium skillet. Add garlic and sweat for 1 minute
  11. Add pulled pork, green chilies and onion slices to skillet. Break up large pieces of pork to make it more shredded. Toast lightly for 1 minute
  12. Add water and seasonings and simmer until water is completely absorbed, about 5-7 minutes. Remove from heat
  13. Prepare Enchilada Sauce
  14. Place all ingredients except sour cream in a blender. Blend until smooth. Stir in sour cream
  15. Assemble Pizza
  16. Spread refried beans evenly over baked rice crust
  17. Layer carnitas over beans, packing down with the back of a spoon
  18. Pour 1/2 cup of prepared enchilada sauce over carnitas and spread with a spoon
  19. Sprinkle cheeses evenly over top of sauce
  20. Bake for 10-12 minutes until cheese is melted and edges start to turn golden
  21. Remove from oven and sprinkle top with green onions
  22. Garnish with slices of avocado and tomato
  23. Let cool for 5 minutes then slice into 9 squares. Serve with a drizzle of enchilada sauce over top
