Sesame Ginger Pulled Pork Bowl

Ingredients

  • 2 c THRIVE Instant Brown Rice
  • 1 c THRIVE Pulled Pork - Freeze Dried
  • 2 c Water
  • 2 tsp Sesame Oil
  • 1 1/2 tsp Garlic, minced
  • 1/2 c THRIVE Pineapple - Freeze Dried
  • 1/2 c Snow Peas
  • 1/3 c THRIVE Broccoli - Freeze Dried
  • 1/3 c THRIVE Red Bell Peppers - Freeze Dried
  • 1 tbsp THRIVE Chopped Onions - Freeze Dried
  • 1 tsp Sesame Seeds
  • 1 tbsp THRIVE Green Onions - Freeze Dried
  • 4 tsp Rice Vinegar
  • 1/4 c Soy Sauce
  • 1 tsp Summer Limeade (Seasonal)
  • 2 1/2 c Water
  • 1 tsp Ground Ginger
  • 1 tsp Cornstarch, for slurry-- Mix with 1 tbsp cold water

Directions

  1. Begin cooking instant brown rice by adding 2 cups of the rice to 2 cups of boiling water and 1 teaspoon of salt. Cook for 6-8 minutes covered, stir occasionally, allow to rest for 3-4 minutes. Set aside while you work on the sauce.
  2. Meanwhile, reconstitute pork in 1 cup of HOT water. Let sit for about 10 minutes and drain.
  3. Add sesame oil into a saute pan and add pork. Saute until golden. Add garlic and caramelize. Add remaining ingredients except for the cooked rice and bring to a simmer. Once at a simmer, add in your cornstarch slurry. Cook to thicken.
  4. Serve over cooked rice and enjoy.
