Simple Butternut Squash Soup

This is a very simple and tasty butternut squash soup. The ingredients can be assembled ahead of time and then you just add water (and cream if you would like) when you’re ready to cook. Feel free to play with the spices to suit your tastes.

Ingredients
- 1 cup Thrive Life Potato chunks
- 2 1/4 cup Thrive Life Butternut squash
- 1/4 cup Thrive Life chopped onion
- 1/4 cup Bouillon - chicken or beef
- 1/2 Tbsp ground cumin
- 1 tsp ground thyme
- 2 tsp garlic granules
- 1/4-1/2 cream or half and half
Directions
- Fill a large pot with about 6 cups of water and bring to a boil.
- Add all the ingredients (except the cream) to the water while it is heating.
- Once the water reaches a boil, reduce the heat and simmer for about 15 - 20 minutes.
- Remove from heat and blend the soup with an immersion blender.
- Return the pot to the stovetop and add the cream (optional). Heat soup to just before it boils.
- Add salt and pepper to taste and adjust seasoning before serving.
