Single Serve Spicy Chicken Quinoa (or Rice)

Ingredients
- 1/2 cup Instant Quinoa or Instant Rice
- 1/8 cup Freeze Dried Kale
- 1/4 cup Freeze Dried Chicken
- 1/2 tablespoon Freeze Dried Green Chilis
- 1/8 cup Freeze Dried Green Bell Peppers
- 1/8 cup Freeze Dried Red Peppers
- 1/8 cup Freeze Dried Sweet Corn
- 1 tablespoon Freeze Dried Chopped Onions
- 1 teaspoon Chef's Choice Seasoning
- 1/2 tablespoon Veloute Sauce Mix
- 1/4 teaspoon Chili Powder
- 1/4 tsp Cumin
Directions
- Add all of the dry ingredients to a quart size freezer bag.
- To cook, empty contents of dry mix into a small pot. Add 3/4 cup water to the mix and stir (might need a little more water if using instant rice). Bring to a boil and then reduce heat to simmer until ingredients are tender and water is absorbed (3-5 minutes)
- Serve with sour cream, guacamole, black beans, Cholula, and a squeeze of lime.
- Note: You can also put the dry mix in a bowl with lid and add really hot or boiling water and stir. Cover and let sit for 5 - 10 minutes and you have a yummy meal with no "cooking"!
