Ingredients

  • 1/2 C THRIVE Chopped Onions
  • 1 C THRIVE Red Bell Peppers
  • 1/2 C THRIVE Tomato Dices
  • 3 C THRIVE Sweet Corn
  • 1/2 C THRIVE Instant Milk prepared
  • 1/4 tsp Cayenne Pepper
  • 1 tsp Course Salt
  • 2 Tbsp Butter, salted
  • 1 C Water

Directions

  1. In Medium size bowl rehydrate corn & bell peppers by adding just enough water to get wet, about 1 cup water.
  2. Gently mix and let sit for 3-5 min.
  3. In a large skillet, melt butter over medium heat. Add onion, cayenne, and salt. Cook, stirring occasionally, until onion is soft, about 2 min.
  4. Add corn and bell peppers; cook, stirring often, until corn is tender, about 2 min.
  5. Stir in milk; remove from heat, and gently fold in tomatoes.
  6. Serve immediately.
