Squashed Banana-Cranberry Muffins

Ingredients
- 2 Tbsp Whole Egg Powder
- 1 C THRIVE Butter Powder
- 6 Tbsp Water
- 1 C THRIVE Banana Slices
- 1 C THRIVE Butternut Squash
- 1 1/8 C Water
- 1 C THRIVE Cranberries
- 1 C THRIVE Honey Crystals
- 1 tsp Salt, Table
- 2 tsp Baking Soda
- 1 tsp Pure Vanilla Powder - Spice Can
- 3 C White Flour (All Purpose Unbleached Flour)
Directions
- Whip together whole egg powder, butter powder, and 6 tbsp of water.
- Reconstitute butternut squash and banana slices as per directions on can, but do not drain any excess water.
- Using a food processor, puree the squash and bananas.
- Mix together with the whipped butter and egg.
- Add remaining ingredients and mix until just blended.
- Spoon into prepared muffin cups. Makes 24 muffins, or 48 mini-muffins.
- For muffins: bake at 375F for 20 minutes, or until toothpick inserted in center comes out clean.
- For mini-muffins: bake at 375F for 15 minutes, or until toothpick inserted in center comes out clean.
- Substitute the cranberries for your favourite Thrive fruits or berries, use chocolate chips, or add the nuts you love to make this muffin your own!
