Strawberry Cream Cheese Truffles

Ingredients
- Filling
- 1 1/2 c. THRIVE Strawberry Slices
- 8 oz. Cream Cheese
- 1 1/4 c. Graham Cracker Crumbs (about 10 crackers)
- 1/4 c. Powdered Sugar
- Coating
- 1/4 c. Unsweetened Powdered Cocoa
- 1/4 c. Coconut Oil
- 2 tbsp. Honey or Maple Syrup
Directions
- In a medium sized bowl combine all ingredients in the filling and mix until smooth.
- Scoop about 2 teaspoons of the mixture and roll into balls. Put them in the freezer for about 30 minutes.
- While those are chilling, heat the coconut oil in the microwave until it is a liquid. Add the other two remaining ingredients for the coating and stir til all the lumps are out. (It won't take long.)
- Take the chilled balls and dip them in the chocolate mixture. Because they are cold, the chocolate should harden quickly and they will be ready to enjoy.
- Makes 2-3 dozen truffles
