Stuffed Jack-O-Lantern Peppers

Ingredients
- 4 Orange bell peppers
- 1 1/2 c. THRIVE Ground Beef (Hamburger) - Freeze Dried
- 1/2 c. THRIVE Sweet Corn - Freeze Dried
- 1/3 c. THRIVE Red Bell Peppers - Freeze Dried
- 1/3 c. THRIVE Green Bell Peppers - Freeze Dried
- 1/4 c. THRIVE Green Chili Peppers - Freeze Dried
- 1/4 c. THRIVE Onion Slices - Freeze Dried
- 2/3 c. THRIVE Shredded Cheddar Cheese - Freeze Dried
- 1 tsp. THRIVE Chefs Choice
- 1 tsp. Cumin
- 1 tsp. Chili powder
- 1 tsp. Cilantro
- 3 c. Water
Directions
- Cut the tops off the peppers and reserve them for later. Remove the seeds and membranes. Put the peppers and the tops in the boiling water and cook until just tender, 2-3 minutes. Plunge the peppers into the ice bath. Once cool, remove them and use a sharp knife to carve a jack-o-lantern face into one side of each pepper.
- In a large saute pan, combine the remaining ingredients with 3 cups of water. Bring to a simmer and simmer for 8-10 minutes or until the water has evaporated.
- Fill each pepper until heaping and place the top of the pepper back on.
- Use toothpicks to secure the tops of the peppers!
