Sweet Crepes with Cream Cheese Filling

These delicious crepes make a great breakfast or sweet dessert. So good to be able to make yummy food using items from your pantry. These will be a new family favorite!

Ingredients
- Crepes
- 1 Cup All-purpose flour
- 1/4 Cup Thrive Scrambled Egg Mix
- 2 Tbs Thrive Instant Milk (dry)
- 1/4 tsp Salt
- 2 Tbs Melted Butter (you can also use Thrive powdered butter)
- 1 & 3/8 Cup Water
- Filling
- 8 oz brick Cream Cheese
- 16 oz container Cottage Cheese
- 1/2 Cup Granulated sugar
- 1 tsp vanilla
- Topping
- 1 Cup Thrive Strawberries
- 1 Cup Thrive Blueberries
- Whipped Cream
Directions
- Add all crepe ingredients into a blender. Blend until smooth. Scrape sides of blender after 30 seconds of blending and then blend for 30 more seconds.
- To make filling, place cream cheese into a mixing bowl and mix on medium speed until smooth.
- Add cottage cheese, sugar and vanilla to cream cheese mixture and mix until well blended.
- To cook crepes, I use an electric crepe maker. It makes it SO EASY! Just pour the crepe mixture onto a plate and dip the crepe maker into the batter and flip it over. Wait until the edges start to pull away from the hot surface and then slide off onto a clean plate.
- To assemble the crepes, place about 1/4 cup filling down the middle of the crepe. You can add your favorite add ins such as Nutella, Biscoff Cookie Butter, chocolate syrup etc.
- Roll the crepe up and top with whipped cream and rehydrated Thrive berries.
