Ingredients

  • 1/2 c. Sweet Potatoes
  • 1 1/4 c. water, boiling
  • 1/4 c. apple juice concentrate
  • 2 tbsp. THRIVE Instant Milk
  • 1/4 c. Shortening Powder
  • 2 tbsp. THRIVE Scrambled Egg Mix
  • 1/2 c. THRIVE Honey Crystals
  • 1 1/4 c. White Flour (All Purpose Unbleached Flour)
  • 1/2 tbsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/4 tsp. Iodized Salt
  • 1 1/2 tsp. cinnamon
  • 1/3 c. butter, melted
  • 1/2 c. butterscotch chips

Directions

  1. Soak sweet potatoes in boiling water until soft (about 10 minutes). Do not drain water.
  2. Add potato mixture to blender and puree with apple juice. In a separate bowl, mix dry ingredients together. Add puree mixture and butter and blend until almost mixed.
  3. Add in butterscotch chips and mix until barely incorporated. Spoon mixture into prepared muffin tin. Bake at 400⁰F for 18–20 minutes. Makes 16 muffins.
