This Taste of the Mediterranean is a must have in every kitchen. Add it to your meatballs or meatloaf. Add it to your spaghetti sauce, or your lasagna. Add it to a thick cream sauce for a pizza grilled chicken pizza. Add it to your alfredo sauce for an amazing dish of fettuccini. Add it to a cream soup for a taste of the Mediterranean. Add it to your Italian Wedding Soup. Start with a couple of tablespoons of this mix, and add mayo and sour cream for a hearty vegetable dip. Or add mayo and some buttermilk for the most gorgeously satisfying buttermilk salad dressing in the world. . . . . The sky is the limit. Any savory dish is better with a Taste of the Mediterranean.

Ingredients
- 2 C THRIVE Zucchini - Freeze Dried blend to a powder in blender for a few seconds. Leaving a few small chunks is desired
- 1 C THRIVE Green Bell Peppers - Freeze Dried blend to a powder in blender for a few seconds. Leaving a few small chunks is desired
- 1/2 C THRIVE Chopped Onions - Freeze Dried blend to a powder in blender for a few seconds. Leaving a few small chunks is desired
- 1/2 C THRIVE Red Bell Peppers - Freeze Dried blend to a powder in blender for a few seconds. Leaving a few small chunks is desired
- 2 Tbsp THRIVE Tomato Powder
- 2 Tbsp THRIVE Italian Seasoning, or Greek, or Mediterranean (Your favourite)
- 1/2 C THRIVE Shredded Parmesan Cheese - Freeze Dried
- 1 C THRIVE Chopped Spinach - Freeze Dried blend to a powder in blender for a few seconds. Leaving a few small chunks is desired
Directions
- Put zucchini into blender and give it only a few seconds to blend. You are looking for it to be powdered, but not completely. A little course is preferable. 2 cups should blend into about 1 cup.
- Do the same with green peppers, red peppers and onions. Just enough to be considered a course powder.
- Pour into a clean quart jar or other container that will have a tight fitting lid. Add tomato powder, seasoning and parmesan cheese. If using non THRIVE parmesan cheese, you might want to store in the fridge, or simply leave the cheese out and add it separately to each dish later.
- Stir with a fork to blend all the ingredients.
- This mix is incredibly versatile. Add it to everything! I am not kidding.
- Mediterranean Meatloaf: Add 1/2 cup - 1 cup to your favourite raw ground beef mixture, form as you usually do and bake in oven as usual.
- Mediterranean Meatballs: Add 1/2 cup - 1 cup to your favourite raw ground beef mixture, form into small meatballs, and brown as you usually do. Serve with pasta and pasta sauce, or over rice.
- Mediterranean Cream of ..... Soup: Add 1/2 cup or so to your favourite cream soup, or chowder.
- Mediterranean Pasta Sauce: Add 1/2 cup or so to your favourite tomato sauce, or cream sauce. Serve over fettucini or spaghetti.
- Mediterranean Scrambled Eggs or Omelotte: Add to beaten eggs and allow a minute or two to 'refresh'. Cook eggs as usual. (Try THRIVE scrambled egg mix)
- Mediterranean Vegetable Dip: Start with mayonaisse and add a few Tablespoons of mixture. Stir well to completely combine. Add sour cream to desired consitency and flavour.
- Mediterranean Buttermilk Salad Dressing: Start with mayonaisse and add a few Tablespoons of mixture. Stir well to completely combine. Add buttermilk to desired consitency and flavour. Pour over salad.
