Thai Shrimp (or Chicken) Curry Soup

Simple, healthy Asian dish made even healthier and easier by using Thrive Life ingredients! Chicken can be substituted for the shrimp if preferred.

Ingredients
- 1 cup Thrive Life Instant White Rice (prepared)
- 1 cup Thrive Life Shrimp or Diced Chicken (prepared)
- to taste salt and pepper
- 2 Tablespoons unsalted butter
- 1/4 cup Thrive Life Chopped Onions
- 1/2 cup Thrive Life Red Bell Peppers (broken into small pieces)
- 2 Tablespoons red curry paste
- 3 garlic cloves
- 1 Tablespoon freshly grated ginger (or 1 tsp. ginger powder)
- 12-ounce can unsweetened coconut milk
- 3 cups Thrive Life Vegetarian Chicken Broth (prepared)
- 2 Tablespoons lime juice
- 2 Tablespoons cilantro (optional)
Directions
- 1. Prepare Thrive Life Instant White Rice, Vegetarian Chicken Broth, and Shrimp (or Diced Chicken) according to directions on cans
- 3. Melt butter in large pot and add Thrive Life Chopped Onions and Thrive Life Red Bell Peppers. Saute for about two minutes
- 4. Add red curry paste, garlic, and ginger. Stir about 2 minutes
- 5. Add coconut milk and Thrive Life Vegetarian Chicken Broth, season with salt and pepper. Bring to a boil, reduce heat and simmer about 5 minutes
- 6. Stir in rice, shrimp, lime juice, and cilantro (if using)
- 7. Serve and enjoy!
