I love Zonya Foco's Lickety-Split Meals cookbook, and we love her LaZonya recipe in my house. I've taken it and thrivealized it. Enjoy! NOTE: this is a great one to freeze after it's been cooked. You can also make it meatless. by Julie Mitchell

Directions

  1. Preheat oven to 400 degrees.
  2. Combine in one bowl the peppers, carrots, and onions for the sauce. Rehydrate altogether. Drain off excess water. Rehydrate mushrooms and zucchini (if using) and drain off excess water.
  3. While rehydrating veggies, heat oil over medium high heat in your largest nonstick pot and add garlic.
  4. Add rehydrated ground beef, veggies, and oregano.
  5. Add pasta sauce and spinach. May need to add a little water to loosen the sauce a little. Simmer to warm everything through. Stir occasionally. When ready, move sauce to the assembly line.
  6. To make the cheese mixture, combine ricotta (or cottage) cheese, dried onion, parsley, and Parmesan cheese together. Divide into 3 equal parts (1 for each layer) for assembly. Move to assembly line.
  7. Place opened bag of mozzarella cheese in assembly line.
  8. Place grated Parmesan cheese in a bowl and place in assembly line.
  9. Place opened box of uncooked lasagna noodles in assembly line.
  10. The Assembly
  11. Coat a 9x13 baking dish with cooking spray. Place 1 3/4 cups sauce in the bottom of the dish.
  12. Layer: 4 hard noodles, 1 3/4 cups sauce, spread evenly, 12 flat tsps cheese mixture dropped evenly in a 3x4 pattern, 1/2 cup mozzarella sprinkled evenly, and 2 tablespoons Parmesan cheese sprinkled evenly. Repeat layering 3 times.
  13. After the third Parmesan cheese sprinkle, complete the fourth and final layer with 4 hard noodles, 1 1/2 cups sauce spread evenly, 1/2 cup mozzarella sprinkled evenly, 2 tablespoons Parmesan cheese, and Italian Seasoning sprinkled evenly over the top.
  14. There will be extra sauce you can freeze for a quick meal later.
  15. Pour 1/4 cup of water all around edges of dish. This provides needed steam to cook noodles.
  16. Cover with aluminium foil, set timer and bake 45 minutes.
  17. Uncover and bake 10 minutes longer.
  18. Allow 10 minutes to set before serving.
