Traditional Chili Con Carne - MIJ (meal in a jar)

I grew up on chili with meat, and it remains a family fave though it has taken on many variations over the years. It used to be a meal to start yesterday, but now it's waiting in a jar to be on the table in half an hour.

Ingredients
- 2 Tbsp Chili powder
- 1 Tbsp Cumin powder
- 4 Tbsp Tomato powder
- 1 Tbsp Beef Bouillon
- 1 Tbsp Freeze Dried Garlic
- 1/4 cup Freeze Dried Chopped Onions
- 1/4 cup Dehydrated Mixed Peppers
- 1 cup Freeze Dried Ground Beef
- 1 1/2 cup Instant Beans - your choice
- 1/2 + cup Freeze Dried Sweet Corn
- 1 quart home canned tomatoes OR 1 lg can 27 oz / 796 ml - whole tomatoes, diced tomatoes, stewed tomatoes - your choice
Directions
- Layer ingredients in a wide mouth quart mason jar beginning with spices. Yes, I know you can put the powders in last and fit a little bit more corn in if you shake it down, but I like it PRETTY. So you be you and decide which order. This is what I do.
- Arrange the powders in heaps so that you can see from the outside what the jar contains. Add everything else in order. End with corn so that you can top it up with more if you can fit it in.
- Add contents of the jar to 2 cups water and stir to thoroughly combine and dissolve all spices.
- Add 2 more cups water + 1 quart of canned tomatoes (or one 796 ml / 27 oz can)
- Bring to a boil, then reduce heat and simmer till beans are tender - about 20-25 minutes, stirring frequently to prevent scorching.
- Remove from heat and let sit 5 minutes. Correct seasoning to your own taste. I don't generally add salt because there is salt in the canned tomatoes and Beef Bouillon.
- optional: Serve with shredded cheddar and/or a dollop of sour cream on top. Serve with corn chips or cornbread.
- Pro-tip: have you ever made your cornbread into waffles? Give it a try. Serving cornbread waffles with chili is terrific!
