Ingredients

  • 1 c. summer sausage, diced
  • 1 can black olives, whole
  • 3/4 c. Cheddar Cheese cubed or HRIVE cheddar cheese
  • 1/2 c. cucumber, diced
  • 3 c. Whole Grain Penne Pasta
  • 1/4 c. THRIVE Chopped Onions
  • 1 c. THRIVE Broccoli
  • 1/2 c. THRIVE Red Bell Peppers
  • 1/4 c. THRIVE Green Onions
  • 1 3/4 c. Italian dressing

Directions

  1. Cook pasta al dente according to can directions.
  2. Meanwhile, combine all THRIVE ingredients in a bowl and pour Italian dressing over them; stir to incorporate.
  3. Drain and cool pasta once cooked.
  4. Mix pasta and all remaining ingredients into vegetable mixture and stir together.
  5. Chill in fridge before serving.
