Pancake Pockets

I love that you can make these pancake pockets the night before and keep them in the fridge or freezer. My son has to get up at 6:00am for school, so now he can grab one of these, heat it up and eat one on the way out to school! - by Shelli Rasmussen

Ingredients
- 3/4 c. THRIVE Blueberries - Freeze Dried
- 3/4 c. THRIVE Strawberry Slices - Freeze Dried
- 2 c. 10 Grain Pancake Mix (You can use any pancake recipe or mix)
- 2 tbsp. Butter
Directions
- Mix up the THRIVE Life 10 Grain Pancake Mix (Prepare any mix or recipe per instructions)
- Reconstitute Blueberries and Strawberries. (when doing this, just add a little water and stir around with a spoon)
- Pour about 2 tablespoon of the pancake mix onto a heated and well greased skillet. Then spread the pancake mix out a bit to thin it out some....so your pancakes aren’t too puffy at the end.
- Scoop a spoonful of the freeze dried berries and add to the center of batter, and spread them out.
- Then drizzle a little of the batter over the berries.
- Then, flip the pancake to cook the other side!
- Eat and Enjoy! What's fun about this, is that you can be creative and use any fillings!
