Who knew? 2 people found this helpfulI never imagined that freeze dried cheese would melt so well and have such a fabulous texture! It is also great "as is" right out the can :)

worried about the mushiness but tasted fantastic. 1 people found this helpfulWe made chicken enchiladas with freeze dried chicken and freeze dried mozzarella cheese. I loved that it took me only around 20 minutes or less to prepare compared to the hour. I didn't deep fry the tortillas either so that sped up the process also and I believe didn't jeopardize the taste. I was happy that the enchiladas were healthy, tasty, and quick to make.

Fabulous! 2 people found this helpfulDaughter-in-Law, Angie, first in family to cook with this. She was making pizza and I just had to know grandchildren's response. Sent her home with a ziploc full. Ang, said she may have rehydrated a bit too much, as a little mushy going on. However, after baking...FABULOUS! She was so surprised.
Son-in-Law, Bob, likes it straight out of the can! He wants to sprinkle it dry on spaghetti with a little olive oil and some bread dipping spices.. We'll see...
